And one more plus - the cast-iron pan is not smooth - there are microcracks and pits on the surface. They get oil and over time, the surface becomes resistant to bums. Therefore, it is recommended to wash it and n with cleaning agents and use it only for pancakes. On modern anti-stick, you can also achieve this effect of real pancakes, but not always, and it’s more difficult to choose ... Moreover, pancakes are not just an ordinary dish, but almost ritual in Russia. Therefore, a departure from the true traditions of cooking deprives him of "soul". :)

Cast iron is heavy, it is better to take aluminum coated, for example marble. The coating is very resistant, I have already proven. About a year has passed since the moment of purchase in posudograd, the pan is in good condition

I have a gipfel pancake pan with a marble coating made of aluminum. Pancakes do not stick and the coating does not scratch.
